Green Challenge #4

Here is my green food challenge. Cowboy Caviar with lots of Avocado and...

Chicken Enchilada Casserole which is made with Salsa Verde (green salsa) and rice with lime and cilantro. Mexican food is one kind that I rarely have to change the recipe to make it gluten free so thats a real bonus for me. None of these recipes had any changes, love that!
